3 ingredient lunch?! YES PLEASE!! One that tastes awesome? Even better!!
So this is one of our faves, and it is SO easy but SO good. My hubby loves it, because he says he still feels like he is eating meat.
It is baked spaghetti squash, pesto (if I am really on my game I make my own pesto) and sun-dried tomatoes.
You just wash and cut the spaghetti squash in half, clean out the seeds part and I cover it with some olive or avocado oil, then bake it for about 30-40 minutes on 400, or until it comes apart easily with a fork.
While its baking I just combine the pesto and tomatoes in my ninja, grind it up, then you have spaghetti sauce!
It is an amazing make-ahead for lunches and everyone likes it. So that makes me happy!
