I wanted to share a quick picture of my fridge (right after I went to the grocery store of course…I am not normally this on top of my game…) just to show you how much food is in it-that isnt meat!
I get asked alot “so what do you eat?” and I am like, pretty much the same stuff as before, just without meat!
I have learned you can pretty much sub mushrooms and beans for anything you used to eat meat with. You just have to get creative. I try and keep alot of fruit around for quick snacks. If it isn’t either already prepared, or something quick to grab, then the choices we make aren’t as healthy.
I go to the store about twice a week now because produce doesn’t last that long.
You will see in the fridge I have a pasta salad already made, with brown rice noodles, peas, corn, shredded carrots, and tomatoes tossed with an Italian dressing. (I like Newman’s Own). Super easy, satisfying and good for you!
I also have easy to grab grapes, strawberries, broccoli, blueberries and applesauce. I pack tons of that kind of stuff in everyone’s lunches each day. I used to hear all the time “if you fail to plan, you plan to fail” and with eating I have discovered that is so true!
